Merry Christmas, friends!

I wish you all a very Merry Christmas!

Just a small gift for you…

A sweet friend recently shared with me this recipe for Amish Apple Fritter Bread…and I’m sharing it with you.  It is absolutely delicious…and my family cannot get enough of it.

Amish Apple Fritter Bread

INGREDIENTS

1/3 cup brown sugar

1/2 tsp. Cinnamon

1/2 cup (1 stick) unsalted butter, softened

2/3 cup sugar

2 eggs

2 tsp. Vanilla extract

1 1/2 cups all purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

1 1/2 cups diced apples (about 4 med apples) mixed with a little cinnamon and sugar to coat.

Powdered Sugar Glaze

1/2 cup powdered sugar

1/2 Tablespoon butter, softened

2 tablespoons milk

1/4 teaspoon vanilla extract

DIRECTIONS

Preheat the oven to 350°. Spray loaf pan with nonstick cooking spray so it slides out easily. Mix the first two ingredients, the brown sugar and cinnamon together in a bowl and set aside.

In a large mixing bowl, beat together the sugar and butter until smooth. Beat in the eggs and vanilla until blended. In a medium bowl, stir together the flour, baking powder and salt.

Add this mixture to the other and stir until well blended. Pour the milk into the batter and blend until smooth. Pour half the batter into the prepared loaf pan. Then add half of your chopped apple mixture. Pour the rest of the batter on top of the apples. Top with remaining apples and pat them slightly into the batter.

Sprinkle with the brown sugar and cinnamon mixture you had set aside. Bake in a preheated oven until a toothpick inserted comes out clean, approximately 60 to 70 minutes.

To make the powdered sugar glaze, blend the powdered sugar and butter together until smooth, mix in the milk and vanilla until a nice, smooth glaze consistency. Let the Apple fritter loaf cool about 30 minutes before pouring the glaze on top.

If your family doesn’t eat them first, loaves also make a wonderful gift.

Dear 2020, In the most dichotomous of years, I a Dear 2020, 

In the most dichotomous of years, I am super thankful for SO many things.....God, family, health and provision to name a few. 

I’m grateful for new friends and old...for freedom of speech, and virtual connectivity in a year that would have otherwise felt so lonely. 

I’m grateful for books, love of learning and growth. 

While this year has been so difficult for so many..
This year was a year of feeling “found” for me personally. 

It’s no longer about followers, or money, or the best of the things that can be “bought”....the aforementioned are all fleeting....which is why the joy they bring never seems to last. 

It is, for me, about substance, grit, and the thing I’ve most admired  in others all my life....unwavering consistency in character during the most massive of challenges many of us have ever faced. 

Thank you 2020 for placing us in a sifter....helping us see who remains constant when our feet have been held to the fire. A truth we may not have otherwise seen. 

This reality check is a gift I will not forget anytime soon. 

And in 2021 may we all seek a way to grasp greater understanding and less “commenting” only to disagree for the sake of being “right. “ 

“Right” is cheap, listening is rich. 

Scrolling on by however....why that is flat out grown up. 

We are worthy of worlds more love than we often afford ourselves....

I hope we are able to find that love for ourselves...so we can better love each other.
